Good coffee plantations in the Oaxaca region were established in the 1870s and today are known worldwide for their exceptional quality. It was at this time that residents of the region began looking for a new product to grow and sell. This need was sparked by a decline in the harvest of the insect cochineal, which produces a natural crimson dye used to dye clothing. Coffee was a natural choice, given the excellent conditions for growing it - mountains in Oaxaca, a climate conducive to growing coffee plants, especially around Cerro de la Pluma.
A common treatment for coffee in this region is washed, thanks to the many wet processing stations. The altitude of the plantations ranges from 810 to 1,250 meters above sea level. The rich soil in Oaxaca allows the coffee fruit to develop beans with a specific, sweet, chocolate flavor but also floral notes.
Explore the Finca Aurora plantation
Finca Aurora is located on the outskirts of Huatulco, on the Pacific coast of the Oaxaca region. Huatulco means “Place where wood is worshiped” in the Zapoteco dialect. In addition to the respite by the ocean, people are drawn to this place for the coffee.
The Finca Aurora plantation is surrounded by magnificent landscapes formed by mountains in the Oaxaca region. The unique conditions for growing coffee plants, the mountainous altitude, the biodiversity and the extraordinary care for the environment of the growers makes us happy to offer you this excellent and naturally sweet coffee. By growing coffee in the shade of native trees, the coffee plants grow slowly, drawing minerals from the rich soil. Such care for nature always translates into specialty quality.
The growing system at Finca Aurora is mainly based on the use of various medium-sized arabica coffees, such as Bourbon, Catuai and Caturra. The average age of the coffee plants is 12 years, which favors the production of coffee.
How was Mexico Golden Dates coffee processed?
Wet-processed coffee has a clean and fruity taste, and the raw material is often of high quality due to this processing. Many coffee producers in the Oaxaca region of Mexico are eager to use this processing. This is facilitated by the public and numerous wet stations and mills where washed processing is done.
Wet (washed) processing results in a clean-tasting coffee, and the characteristic sweet chocolate notes in coffees from Mexico will be balanced by the delicate and clean acidity typical of the washed process.
