Roasted coffee dedicated for filter coffee
Is it ok to roast coffees "for everything" - espresso, filter coffee etc? It can be, just why? There was an old polish bleach commercial that perfectly sums up the multitasking and versatility of products:
- when something is for everything, it's for nothing.
When brewing coffee in an espresso machine, which is a pressurized method, the ground coffee literally comes into contact with water for 25 to 35 seconds. If we use, for example, a drip, AeroPress or Chemeks, or a pour-over coffee maker, the coffee in such methods brews from 2.5 to 12 minutes....
That's why our Ethiopia High Flyer is roasted specifically for alternatives. Each method requires a different roasting profile, and properly roasted coffee will reveal its unique character in your cup. We just highlight it, and you discover it.

The Hario V60 drip is the most popular method among alternatives. It is eagerly brewed by our coffee drinkers at home, but baristas in coffee shops also reach for the drip. Read the article about the Drip V60 and learn how to brew coffee in it professionally.
Kalita dripper
Do you like intensity of flavor? Ethiopia High Flyer brewed in this method will be more intense than from a drip and other methods.... There will also be more sweetness in it, thanks to the specificity of the Kalita filters and the brewer itself.
How to brew coffee in Kalita?
We can bid: drip or Kalita. One thing is certain, in no alternative method will you get coffee with a strong flavor like from Kalita. This is the favorite method of our entire roasting crew, so read the article on how to brew coffee in a Kalita dripper.
The iconic Chemex
If you are not fond of high intensity flavors and prefer a mild taste, Ethiopia High Flyer coffee will be perfect for you. The Chemex makes the coffee brew delicate and conquers its sweetness. Our Ethiopian coffee has a higher sweetness, so if you brew it in a Chemex you will further reduce the fruity taste and conquer the sweetness of the coffee.
Despite its iconic design and stellar popularity, Chemex is often belittled in the coffee world. Why? It's because of the taste of the brew, because through coarse filters, the coffee that comes out of this method is usually quite flat. Chemex is very easy to brew badly, so we have prepared a recipe that will take even more out of this method.

Bale Mountain Plantation is located in Arsi, the Bale Mountain range that makes up the southeastern Ethiopian Highlands, at an altitude of 3,000 meters above sea level. The farm stretches from 1,800 to 2,100 meters above sea level, and the terrain extends all the way up to 2,200 meters above sea level, where there is a nature reserve that is home to birds and animals.
The farm is also a world-class guesthouse with a magnificent view for coffee lovers from around the world who want to experience the uniqueness of the farm. Although Mr. Israel is investing in and installing a high-tech system, it is very important to him to preserve traditional coffee norms passed down from generation to generation.
Ethiopian coffee from Bale Mountain farm
The Bale Mountain coffee farm is owned by Mr. Israel Degefy, CEO of Kerchanshe Trading PLC, the largest coffee producer and exporter in Ethiopia. Israel received the farm as a gift from his grandmother, Mrs. Wagayehu Bekele Debela. She grew coffee traditionally for domestic use, along with wheat and barley. At harvest time, she would usually send coffee from her own farm for the whole family as a gift.
Israel recalls helping his grandmother with the farm and other household chores. He recalls how growing up with his grandmother had a huge impact on his life, defined his character and taught him about life, culture and, above all, coffee. Knowing how passionate he was about coffee, she decided to give him her traditional farm as a gift.
Israel says he reformed many things on the farm after receiving it from his grandmother. This includes implementing drip irrigation to cope with climate and environmental changes, and planting only high-quality coffee seedlings without the use of chemicals, fertilizers or pesticides to produce the purest coffee beans.
Conditions for growing coffee plants
This coffee grew on the slopes of the mountain at an average altitude of 2,000 meters above sea level. Ethiopian coffees usually do not use pesticides and artificial fertilizers to grow, and this was the case with these Ethiopia High Flyer coffee beans The coffee plant thrived on mixed lands ranging from red earth to brown lands of volcanic origin. Such lands in most of the country, including parts of the best known: the Sidamo region and Guji ensure that Ethiopia's coffee and its bush have an endless supply of minerals. Thanks to such conditions, coffee plants do not require fertilization. The fruits of Ethiopian coffee are the smallest coffee cherries found, for the flavor, sweetness and aroma is locked in the beans. Taste what coffee tastes like without human interference with nature.
Ethiopian coffee on plantations cultivated in harmony with nature
From the seedling, the appearance of flowers on coffee bushes to the cherry tree, the land that gives birth to the world's best specialty segment coffees must be treated with due respect. Plantations that grow the highest-quality coffees take care of their environment by shading the area with agroforestry trees and plant biodiversity so that pesticides don't have to be used.
The Bale farm is surrounded by two rivers flowing into the Wabe Shebelle River and mountains. The Bale farm's environmentally friendly and sustainable coffee production practices help the community living around the farm. The tall trees surrounding the plantation, which provide life-giving shade, play a key role in conserving water and increasing soil fertility.
The farm also engages in social responsibility activities such as building local roads, establishing nurseries, distributing coffee seedlings free of charge, building schools, and providing financial support for the community to face the challenges of the off-season.
Meet dry processing method called natural
It intensifies certain sensations, we feel a higher sweetness, a fruity acidity in the taste coming from fermentation, and it is not uncommon to smell cherries or strawberries in the aroma. Such a coffee will be brilliant when brewed with one of the alternative methods, when the coffee has a light roast, but also when we use a darker roast, it will give a brilliant blueberry-filled espresso, which, when poured over milk, will hide the acidity and taste like strawberry shortcake. Have we encouraged you? Unfortunately you won't find such flavor in capsules, the situation will be saved by the menu of a good coffee shop, specialty coffee shops brew such coffees and we can promise you that it will be one of the best cups of your life. Want to learn more about coffee processing? Take a look at our blog article on how naturals are made.
Detailed informations about processing this coffee
Our Ethiopia High Flyer is a naturally-processed coffee. Hand-picked coffee cherries were washed in fresh river water and then sun-dried on African beds. It usually takes 21 to 28 days for the coffee to dry in the sun, and the beans are turned at least four times a day. If you're interested in the topic of processing coffee using this method, please visit our blog for an article on coffee processing, where you'll find more detailed photos with many plantation photos.
If you like eat sweet fruits, do not be afraid to drink fruity ethiopian coffee
We remember how products from stores taste like, coffee that is bitter and burnt or coffee that is bitter and sour. Good coffee has acidity, but it balances the coffee, it is fruity in taste, not sour, tart and twisting. Arabica coffee grown on plantations in Brazil will be delicate and there will be sweetness, notes of nuts and caramel, but these are not the only flavors in the coffee world. And it is extremely rich, so we encourage you to go there and try at least this coffee from Africa.
Is it organic coffee?
Practically yes, formally no. The beans from Ethiopia are grown organically, that is, without any chemicals to protect and stimulate the growth of the plants, they mostly grow wild, and it is such, wild-growing coffee cherries that then end up in the processing and ultimately in our packaging.
Is there a chance that there is robusta in the package?
No. Coffea Canephora, popularly known as robusta, is definitely not in our packages. The arguments are many:
- Robusta grows at different altitudes,
- Robusta comes from a different part of Africa,
- Robusta is not actually grown in Ethiopia, the government puts a lot of emphasis on growing Arabica, which brings more money to the country,
- Robusta grains look different, it is easy to distinguish it from Arabica.
